Today is Day 2 of Susan’s Last 10 Days in May Magic Bullet Muffin & Fat Back Buster UnDiet & Weight Release Thing, and it’s almost Day 3 already!

(Someone organized would have done all the posts in advanced and scheduled them. But no, not me. Flying by the seat of my pants as usual :-))

It’s  still raining, and I’m still busy. Not much news, other than I have been unblocked at Facebook, and will soon blog about the block.)  Meanwhile, back to the 10-Day Thing…

As I mentioned yesterday (i.e. Day 1), my Last 10 Days in May Magic Bullet Muffin & Fat Back Buster UnDiet & Weight Release Thing has no menu plan, I’m making it up as I go along.

Breakfast

This morning for breakfast I had another delicious smoothie, accompanied by a handful each of raw and unsalted pumpkin seeds and sunflower seeds. Smoothie ingredients as follows (The list of ingredients I bought for the week is here.):

Grapefruit Banana Strawberry Smoothie

  • one half grapefruit
  • five strawberries cut in half
  •  one half banana
  •  one third cup soy milk (unsweetened)
  •  one thirdcup almond milk (unsweetened)
  •  one third cup  grapefruit juice (with pulp)
  • 1 tablespoon Chia seeds
  • two ice cubes

The first time I tried this one (i.e. last week) I found it a bit tart, so I added a teaspoon of honey and reblended it. Today, I found the sweetness, or rather lack thereof, to be perfect. Perhaps the strawberries or bananas had an extra hit of  sugar in them.

Like yesterday, I couldn’t drink all of the smoothie, so  one third of it is still in the fridge in its bullet cup, with a lid. I’ll have it tomorrow.

I had a quesadilla for lunch, the recipe for which I found in the cookbook that comes with my Magic Bullet.

Here it is:

  • 1/2 Cup cheddar cheese
  • 1/3 Cup cooked chicken
  • 3 to 4 cherry tomatoes (or one half regular sized tomato about 1/4 cup)
  • two flour or corn tortillas (I used corn)

Put all the ingredients except for the tortillas into the Magic Bullet tall cup and chop by pulsing until you achieve a blended, but chunky texture. Spread the mixture between the tortillas and put in the microwave on high for one to 1 1/2 minutes until fully heated.  Mine was very hot in one minute.

I must confess, I found the Magic Bullet to be less-than-perfect with respect to the chopping function. As I thought it might, it kind of made mush of some parts, and didn’t chop others, despite the fact that I tried all the recommended techniques (i.e. pulsing, shaking and tapping).

The FAIL may have been the result of me putting more than the recommended amount of each ingredient. (I often tend to think more is better :-))   However, according to the “Magic in the Magic Bullet” review here, I’m not alone in having this experience.

Despite its somewhat inconsistent consistency, I spread the mixture on one tortilla,  topped it with another  tortilla, “nuked” it, and found it to be delicious in the end.

I came across some leftover chicken in the fridge, so I had chicken salad with celery and mayonnaise for supper.

I made chicken soup with the chicken carcass, and froze it in batches for later – yummy!  (See =>)

On the exercise front, I walked and cycled for an hour each respectively, and so I allowed myself a glass of white wine with dinner 🙂

Important caveat: I am not a nutritionist, and this may or may not be a “healthy” regime for me or you or anyone else. It’s just a thing I’m doing for a short time for my own personal long-term well being.
